Roasted Breadfruit Salad

Nutrition: Breadfruit can be used to make flour which is a gluten free alternative to regular wheat flour.

Ingredients

1 roasted breadfruit, cubed

1 large cucumber, cubed

1 large tomato, cubed

¼ cup of shredded carrots

1 small onion minced/grated

1 clove garlic minced/grated

1 pimento pepper, minced/grated

3 tbsp of coconut oil/ this can be substituted according to the desired taste with ¼ cup of vegetarian mayonnaise.

2 leaves cilantro, minced

1 sprig of celery, minced

2 leaves of lettuce, chopped fine.

Salt to taste

Directions

One medium sized, ½ ripe breadfruit can be placed in your oven to roast at 350 degrees Fahrenheit. The breadfruit can be roasted for about one hour or as long as it take it to cook/ to be moderately dry to the core. Let cool, cut out the stem and centre and then cube the remaining fleshy pieces.

Add all ingredients into a bowl and mix well.

Can be left for a 15-30 minutes to marinate

This can be eaten with peas/beans simply or added to compliment a more diverse meal.
